Del Mar Racetrack Kills Horses

This was a good weekend!
I got to protest #DelMar racetrack, where horses beaten & abused,
and killed for $$$. See my dear vegan activists friends.

The Loving Hut Vegan Pho

It is getting cold in San Diego
Nothing like a hot vegan Pho plate
Pho soup is originally made with beef
but the vegan version is so much tastier!
This is the Blissful Pho for the Loving Hut
It is an AuLac traditional noodle soup
with fresh rice noodles, veggie fillet protein
basil, bean sprouts, cilantro and onions.

Most dishes can be 'veganized'
We don't need to kill animals to eat
fantastic traditional dishes!

Parotas

Now this is real ‪‎vegan‬ Mexican‬ food,
Parotas, my aunt brought them from Mexico,
a side of beans and fresh homemade salsa.
Parotas are seeds of a beautiful tree.
Read the information on the tree.
Also the wood is used to make beautiful furniture.
Authentic‬ Mexican food is not full of meat,
in the center and south of the country we eat a lot of plants
‪Eat a tree, eat plants, save animals & our planet!

quick vegan delights

I keep on discovering fantastic vegan food
every day, I don't have time to cook
very sophisticated meals, but I rely on simple
quick 5-minute preparation vegan dishes every day
here a few:
crispy Tempeh with Sriracha sauce

Chana Masala chickpeas with brown rice and veggies

Dr. Praeger's veggie burger on Ezekiel 4:9 bread

black beans with heirloom tomatoes & cayenne pepper

a favorite: yam scramble!

Chicken-Less Mandarin Orange Morsels for Meatout day

I brought the Trader Joe's
Chicken-Less Mandarin Orange Morsels
to share at work for the MeatOut day,
I add broccoli, pineapple, & green bell-pepper,
they are a success!
Tip: this time I cooked on coconut oil,
so I can taste a bit of coconut too,
with the pineapple is like a piña colada dish

St. Patrick's Day

Happy Saint Patrick's Day!
Started today with a green drink:
pineapple, dandelion greens, kale & lemon & water
healthy refreshing green drink

and had a lot of fun this past Saturday
at the Balboa Park St. Patrick's Day Parade
I volunteered at the MeatOut Event
encouraging people to NOT eat meat or
any animal products at least one day a week.
We gave away sample of "vegan chick'n salad"
and vegan cookies, people loved the salad
and the idea that I wasn't made with poor tortured chickens!
but with this delicious Beyond Meat chick'n made from plants!

 here me, happy volunteering and talking to people about
how delicious vegan food is, and all the cruelty and natural resources
we can spare if we don't eat our friends the animals!

vegan quick meal

a vegan breakfast!
I keep frozen Ezekiel 4:9 bread &
Tofurky Deli slices at work,
and a bag of baby spinach or kale,
for these 'emergency' breakfasts at work,
being vegan is so easy, cheap, & compassionate
way of eating & living!
oh I forgot the Vegenaise too!
the cup of coffee with soy milk
and an organic apple.
No Animals Were Hurt on the Making of this Meal!

Please try some vegan sandwiches yourself
they are delicious, and the animals,
the planet, and your health,
will thank you for it!

Quick vegan lunch at work:
Quinoa with red bell peppers, onions & garlic
(I cooked it last night, 15 minutes),
salad with baby kale, chards & spinach with grape tomatoes
(all organic and from a Trader Joe's bag),
tofu (microwaved with garlic, rosemary & black pepper).

Vegan food can be easily done,
is super tasty, healthy, and so cheap!

lunch at work: quinoa, salad, tofu

My favorite part: NO animals were hurt,
I didn't have to use the kind of food that
has to be raised for months,
living in a tiny cage suffering, then slaughtered,
and transported in so many trucks back & forth,
the grains & veggies were cultivated, cooked and eaten,
they didn't have to circulate through a cow's or pork
body to transform into calories,
the rest of the ingredients too,
this is good for the animals! For they don't suffer
and they don't have to die!
it is good for the environment!
imagine all the water saved by using crops directly to eat
instead of feeding the grains to the animals!

and for my health! My cholesterol has dropped
dramatically and even if I eat a lot of vegan bakery items
and dark chocolate every night, I am loosing weight!
