Animal Welfare at Risk in Experiments for Meat Industry...

After reading I feel so hopeless, the poor animals!
The humans and the species that we have become.
I started questioning my food choices
because of health reasons and very quickly realized
where our meat comes from, long story short;
I am a healthy vegan now,
easily done if you get the proper information.
70% of the crops in the USA go to feed animals,
if we use those crops to eat the grains directly,
we could actually feed the entire planet,
and save water and other natural resources.

I am glad people are getting educated and
realizing that producing 'cheap' meat
is NOT the answer to feed the planet,
the UN has been saying this for years
I truly hope that people reading this article in NYT
start paying more attention to what they eat,
the amount of suffering that implies trying
to feed a planet on ‘cheap meat’,
tax payers shouldn’t be supporting this nor
the immense cost of medical bills for a sick population.

Quick vegan lunch at work:
Quinoa with red bell peppers, onions & garlic
(I cooked it last night, 15 minutes),
salad with baby kale, chards & spinach with grape tomatoes
(all organic and from a Trader Joe's bag),
tofu (microwaved with garlic, rosemary & black pepper).

Vegan food can be easily done,
is super tasty, healthy, and so cheap!

lunch at work: quinoa, salad, tofu

My favorite part: NO animals were hurt,
I didn't have to use the kind of food that
has to be raised for months,
living in a tiny cage suffering, then slaughtered,
and transported in so many trucks back & forth,
the grains & veggies were cultivated, cooked and eaten,
they didn't have to circulate through a cow's or pork
body to transform into calories,
the rest of the ingredients too,
this is good for the animals! For they don't suffer
and they don't have to die!
it is good for the environment!
imagine all the water saved by using crops directly to eat
instead of feeding the grains to the animals!

and for my health! My cholesterol has dropped
dramatically and even if I eat a lot of vegan bakery items
and dark chocolate every night, I am loosing weight!

vegan food

these are some of my simple every day vegan dishes

avocado sandwich with green onions, cilantro, tomatoes on sprouted bread

fresh fruit and raw veggies are a great snack, easy to find organics in California

vegan lemonade, with maple syrup, organic lime juice and the secret ingredient: ground fresh ginger for a spicy touch!

the juicing basket! except for the avocado, I eat avocados often, California is the land of the avocados!

kale, white mushrooms, walnuts and blueberries salad with homemade vinaigrette, it was fantastic!

one of my favorite dishes, homemade veggie soup!

eating shark

eating shark
Hai gegessen
comiendo tiburón

i have never tried shark before
the other day at the Fish Market i saw it
it was local Southern California shark
either Thresher or Bonito

it was actually pretty good
not a very strong fish flavor
more on the mild side, white lean meat
and very soft, i guess is the freshness too
that made it so soft, the Fish Market has
really fresh fish to go



I cooked with a non-chef proof recipe
olive oil, chopped garlic, fresh ground white pepper
and sea salt, on a pan fried about 5 minutes on each side
it was easy, quick and tasty
for side dish, some grape tomatoes with
home-made dressing of balsamic vinegar, olive oil and rosemary



now i guess the only concern on eating shark
is that apparently has high levels of mercury
too bad 'cause i really liked it and it's very affordable

caprese flowers

these little Caprese flowers are based
on my favorite Italian salad, Insalata Caprese



i found at Henry's, i mean, Sprouts
these mozzarella balls, made by BelGioioso
a superb brand of cheese



so from the little mozzarella balls and the grape tomatoes
i got the idea of combining them on top of basil leaves
to form little flowers instead just tossing them on the salad

in my version of Caprese flowers, i added fresh-cut rosemary
to the dressing, which i made with Olive Oil,
balsamic vinegar, fresh-ground black pepper and chopped garlic



the result was delicious! the taste is a bit different
from a 'regular' Insalata Caprese, as with the flowers
you have to bite each little ball of mozzarella
and the grape tomatoes, so they feel different in your mouth
now i like my version better than the original!

pre-Labor day burgers & the fading of the Summer

i have mostly cut red meat from my diet
but when Sunday night my friend perro & his lovely wife m (m&m)
invited me to have some hamburgers, knowing perro's dedication
and detail to food, i gladly accepted...

so may the cows and pigs forgive me but i ate one of these!
delicious grilled hamburgers made of grass-fed beef
with bacon, grated Gruyere cheese, spicy guacamole,
tomatoes, and served on his own baked kaiser rolls

all made from scratch!

now the 3 day weekend is coming to an end
and that melancholy that belongs to Sunday nights
now it's here on a Monday of Labor day
i am glad to have a job, but i would love a couple of extra days off

Labor day marks the end of the Summer
although we barely had a summer here in San Diego
only a handful of days it was hot, most days were cool and some nights
were very cold, i personally prefer cool temperatures
so i was delighted, but the absence of heat made the summer fade faster

today was unusually coldish, gray, and windy, it felt
like the Autumn and having had a Holiday
i ended up thinking of Christmas!!

and to celebrate the end of my summer
which is always wasted, a lovely song

quick fixes

i try to eat mostly fresh foods
something i cook or take out
but oh these modern times
many times we have to rely
in quick fixes for food



surprisingly, some of the 'healthy'
frozen food is that one for kids!
like this Elmo Whole Grain Pizza
don't taste that bad, actually it's
pretty decent, and with 19 grams
of whole grain, not so bad for a
frozen dish



as for coffee, i buy whole beans
i grind them myself every morning
yet sometimes i am in a hurry
or i crave an early evening crave
for a foamy espresso



while in Germany i discovered this
amazing instant Espresso from Nestle
i can't find it in the US! and my second
bottle is coming to a close end..
too sad
but if you live in Europe
try it! it's great
of course a 'real' espresso is the best
but this one for an instant
tastes great! but add sugar
i usually don't add sugar to my coffee
aber diese Kaffee mit Zucker ja!!

simple green tea noodle soup

for cold or sunny days
this soup is very easy to make
and very healthy too



after trying some wild vegetable soup
with some green noodles
at a little Tokyo Izakaya in Los Angeles
named Haru Ulala, a couple of months later
i saw the same kind at a 99 Ranch store
and realized that the green color of the noodles
was 'cause they were Green tea flavored noodles

i didn't know how to replicate the recipe
of the original soup but i remembered
some of the ingredients, shiitake mushrooms
and green beans, and other veggies



so gave it a try since the ingredients are cheap
i thought, oh well! if i doesn't come OK i can just toss it...
i made a very small batch and
since i didn't have green beans i made my soup with only
dried shiitake mushrooms
and some small broccoli florets
at the 1st try came out OK, very similar to the soup i had
and very edible indeed, by now it has become a favorite
quick fix when craving soup

here the quick instructions:

-soak the dry mushrooms for at least 15 minutes
in lukewarm water

- cut the broccoli or any other veggies in very small sizes
(i don't cook the veggies, they just cook with the boiling water
of the soup right after serving, so they are still crunchy and crisp
but make sure to use veggies that don't require a lot of cooking time
such as potatoes, i think small carrots or green beans are good options)

-in boiling water, add the amount of noodles you will eat
and cook for 4 to 5 minutes

-in the same water you cooked the noodles, add the mushrooms
and the broccoli (or other veggies)

- serve & eat it right away! while steaming

it has a very earthy fresh healthy taste
and afterwards your belly & spirit shall be warm

classy dessert rescues pesky Monday



last Monday, yesterday
had all the inevitable symptoms
of a blue Monday

cumulus of neurosis and apathy
climbing up & down my spine
traces and hope and lost alternated in me
and mood swings were frequents
and switched between minutes
and sometimes seconds, intervals
and no coffee amount was enough to bring to me
the urgently required spark

the smell of carpet glue lingering in the office
from last week's repairs
soporific loads of work
regrets of a not well-enjoyed weekend
having missed a party among friends
were bringing me down...
in 4 colloquial words:
i felt like shit!

but about 1/2 working day
after lunch and the Mondays staff meeting
my pinche best friend and boss
reminded me that he had brought to the office
some left overs from his party the day before of
"molten chocolate cake with vanilla creme freaiche, and raspberry coulis"

oh so all went so much better then!!!
and i truly appreciated
el perro's dedication to deliver the dish
so properly!
he carried each ingredient in separate containers
and instructed me to warm up for 7 seconds the molten cake
in the microwave at the lunch room in the office
once the cake was warm
he dropped carefully the creme freaiche on top
and told me to place the three coulis
i must confess all lasted little after served
barely enough for the shot,
promptly i devoured it all!

the cake was soft and moist and just warm in the inside
and the creme was still cold and the raspberries crispy
all served on an office paper plate
was great! top chef delivered at my desk

i am glad my friend is into cooking so professionally!
ah! i got many great meals already, ha! but not just that
i am also glad to hear every day more people get the importance of home-made cooking
the importance of food and the role of it in our lives
on how nutrition can alter one's body chemistry for better or
worse; it seems to me that, gladly, food is recovering a new importance
on people lives, all these chef TV programs, cooking contests, etc. seem to encourage this new age where we respect fresh and interestingly cooked food instead of industrialized pre-fabricated so-called food factories have been feeding us. I just find it beautiful, all this food & cooking renaissance!
and i guess...

i just love to see people playing with their food again!

ein Seltsamer Samstag



gestern war
yesterday was
ayer fué un día extraño con tintes de tristeza



and some words took me by surprise
[surprised more like a little perplexed me above]

& it's too sunny too hot
too dry & too dry & too dry
again here in California
since Friday night
and i can feel my head, my soul
and my heart drying out to the compass of
lost, confused Summer days dancing
around our Autumn time bringing
Santa Ana winds and fires
up & down

and like this dry land
today my heart too
got another little crack

oh well! to comfort myself
the best way i know around
cooking myself some comfort

here a Summer-type of pasta
chunky but fresh-tasting tomato sauce

the ingredients
- 1 can of peeled diced tomatoes* (14.5 oz or 411 gr)
- olive oil
- fresh basil [i got mine from my little plant outside]
- 2 garlic cloves
- 1/4 or a 1/3 of an onion
- fresh grounded black pepper
- sea salt
- oregano
- Parmesan cheese if Parmigiano Reggiano** better,
but any kind will do



the cooking
- heat the olive oil on a medium sauce pan
- add the fined chopped garlic and onion for 3 minutes to the hot oil
- add the diced tomatoes and the basil
- season to taste with the sea salt, fresh grounded black pepper, and oregano
- cook on medium heat covered for about 20 minutes
- toss with the fresh cooked & drained pasta of your choice



top the pasta with the sauce and serve topped w/ Parmesan cheese
i didn't have Parmesan but i had this delicious
Asiago BelGioioso, dry enough to be excellent on pasta
and it has a distinctive sweet and nutty flavor



so here my comforting dinner for
an uncomfortable day



the fresh pasta accompanied of some
whole wheat french bread with softened butter
not that i need more butter looking at the size of my hips
or that the butter needs to be softened in this heat

and sadly no wine no beer
it's so dry here! drinking alcohol just adds to the dehydration
so just more mineral sparkling water for me

let's see what Sunday has reserved for me
under it's Sundayish sunny reheating sleeve...

* please notice that i don't use tomato paste or puree for this sauce, you can replace the canned tomatoes for fresh roma tomatoes for an even fresher taste!

** i had NO idea that Parmigiano Reggiano Formaggio had a consortium, that's what i call being a BIG cheese

as i ate it this morning
just warmed up sprinkled with sugar & cinammon
accompanied with a glass of cold milk

too bad i don't remember the kind of pumpkin it was

cappuccino and croissant

after eating few vegetables variety
turkey, olive oil, and brown rice
for almost a week

this morning i woke up from a wonderful dream
still the taste on my lips
of a fragrant creamy foamy strong cappuccino
and the flaky buttery texture of a fresh made
croissant

oh, i dream of drinking a cappuccino
while eating a croissant

dreams of
cappuccinos and croissants

at least an apple turnover
with a latte...

a good day starts

with a good breakfast...
and since i found this Mexican gigantic

Brombeere
Blackberries
Moras negras


[look at their size compared to my hand!]

so i decided to use them in a

super-Frühstück
super-breakfast
super-desayuno

all the ingredients here are very healthy food
i linked some of their benefits
please click and read them!

every day i realize more the importance of
feeding oneself with the proper foods
the chemistry in our bodies reflects in every
aspect of our lives... i many times indulge in
not so very healthy food... but it is comforting
to notice that after eating healthier food for
as little as 1 or 2 weeks, i start feeling with
more energy, lighter, and even happier...
mmm, body chemistry!

now for that delicious healthy breakfast

ingredients

1 cup of low-fat (1%) Kefir milk
1/2 cup (or more) of delicious blackberries
1/4 cup of walnuts
1 tablespoon of Maple syrup




just cut the berries if the are too big
and mix them with the Kefir milk
chop the walnuts and sprinkle with the maple syrup

i use Grade B maple syrup, which is less processed than
grade A, but has this nutty almost "tree-like" flavor
mmm, and has to be Canadian or from Vermont
the experts in maple syrup regions

oh, mouthwatering!



and here some healthy alternatives
in case you don't find the ingredients

if you don't have Kefir milk, use low or fat-free yogurt
if you don't have berries, use any other chopped fruit
if you don't have walnuts, use any other nut
if you don't have maple syrup, use regular bee honey

and this is delicious as a dessert too!

breakfast: huevos con ajos y tomates

I have been very lazy the past couple of days
just resting and hanging-out at home
but also I have been trying to cook myself
my own meals while trying to eat healthier
for me is a pleasure to cook simple meals
and i have been trying to include ingredients
that are listed on this book that my friend Tina
recently gave me: Super Foods RX



so one of the quick breakfast recipes that i developed
myself is
Ei, Tomaten und Knoblauchzehe
eggs with tomatoes and garlic
huevos con tomates y ajo

Ingredients

5 cherry tomatoes
2 cloves of garlic
1 egg
1/2 teaspoon of extra virgin olive oil
salt & pepper to taste
1 'sunny' disposition of making yourself and yummy and healthy breakfast



optional: slices of green serrano chile, for a mexican spicy twist
or some fresh basil, for a more Mediterranean flavor






it is very easy to make
just chop the tomatoes and garlic
and cook them on the olive oil
on a thick pan for about 3 minutes
add the already beaten egg and heat
until the egg is cooked



here i served with some cuban style black beans
from trader joe's



beans have tons of vitamins B and fiber
and tomatoes, garlic and olive oil are among
the healthiest foods in the world
so enjoy!



to accompany all, a good cup of black coffee
i recommend you the Trader Joe's
Bolivian Organic blend
is a caramel smooth medium but also dark blend
perfect for breakfast

my eyebrows hurt (the sandwiches and vermouth edition)

i know it sounds idiotic
but my eyebrows hurt!
not the hair itself
but more the bones that go
right behind the line of the eyebrow

a strange pain, like a muscular pain
not itchy, the skin not sore, and not a headache
really... but
just... pain?

oh my eyebrows!

¡ay ay mis cejas!
[this translation made me laugh
i am such an idiot translating this
but i laugh, hope you too!]


mmm? i've been working a lot with
Photoshop and dealing with a
detailed image today, and i squint my eyes
sometimes a lot...
and i read a good load of Deutsch last night
'cause i had der Kapitel 9 Test

and it's April's Fool
April! April!
[...in Deutschleid heh heh]

so anyway, this day did fool me
and end up being... the day!
the day...
of the fool-me eyebrow pain

still hurts!

and i wrote something about this day
on a piece of paper at school
a sentimental note and then i couldn't find it
some kid at school might be laughing over me now
or worse, just on the floor, so...

so i will drink a vermouth
i don't think people drink vermouth straight anymore
i drink it straight, but with ice
my mother says it's an old's people drink
but i have a vermouth once or twice a week

my favorite one is Cinzano
but this one Di Torino Rosso that i found
at Trader Joe's is pretty decent, not the best
but not like there is a lot to judge over a vermouth
or is there?
...

and yes... technically my mother called me old
yes, i might behave stubbornly old-er sometimes
manchmal manchmal...
a veces, a veces...

so that's why i cure myself with these
sandwiches
oh sand-wi-ches, like that, slow... and soft
